Hearty Beef And Vegetable Soup

Ingredients

  • 2 lbs stewing beef
  • 1 soup bone
  • 2 quarts water
  • 1 cup chopped onion
  • 1 cup chopped celery
  • 1 cup tomatoes
  • 2 tsp salt
  • black pepper to taste
  • additional vegetables such as diced potatoes, carrots, turnip, string beans, corn, peas, cabbage, or chopped peppers

Method

  1. 1 Place the soup bone, beef, and 2 quarts of water in a large pot. Bring to a boil and simmer for 2 hours.
  2. 2 Add the chopped onion, celery, tomatoes, salt, and pepper to the broth.
  3. 3 Stir in any additional vegetables of your choice, such as potatoes, carrots, or peas.
  4. 4 Continue boiling until all vegetables are tender. For a heartier soup, chop the meat into small pieces and return it to the broth.
