Hearty Beef And Vegetable Soup
Ingredients
- 2 lbs stewing beef
- 1 soup bone
- 2 quarts water
- 1 cup chopped onion
- 1 cup chopped celery
- 1 cup tomatoes
- 2 tsp salt
- black pepper to taste
- additional vegetables such as diced potatoes, carrots, turnip, string beans, corn, peas, cabbage, or chopped peppers
Method
- 1 Place the soup bone, beef, and 2 quarts of water in a large pot. Bring to a boil and simmer for 2 hours.
- 2 Add the chopped onion, celery, tomatoes, salt, and pepper to the broth.
- 3 Stir in any additional vegetables of your choice, such as potatoes, carrots, or peas.
- 4 Continue boiling until all vegetables are tender. For a heartier soup, chop the meat into small pieces and return it to the broth.
