Ingredients

  • 1 onion, diced
  • 2 tablespoons butter, divided
  • 1 ½ cups broth or water
  • 2 tablespoons flour
  • 1 cooked duck or goose, cut into pieces
  • Salt and pepper to taste
  • 1 tablespoon ketchup
  • Bread slices, cut into strips (sippets)

Method

  1. 1 Dice the onion and sauté in 1 tablespoon butter until soft but not browned.
  2. 2 Add broth or water and bring to a boil. Mix remaining butter with flour to make a roux, then stir into the liquid to thicken.
  3. 3 Add the cooked duck pieces to the sauce. Season with salt, pepper, and ketchup. Warm gently without boiling.
  4. 4 Fry or toast bread strips. Serve the hashed duck over the bread sippets.
