Hashed Duck Over Toast Sippets
Ingredients
- 1 onion, diced
- 2 tablespoons butter, divided
- 1 ½ cups broth or water
- 2 tablespoons flour
- 1 cooked duck or goose, cut into pieces
- Salt and pepper to taste
- 1 tablespoon ketchup
- Bread slices, cut into strips (sippets)
Method
- 1 Dice the onion and sauté in 1 tablespoon butter until soft but not browned.
- 2 Add broth or water and bring to a boil. Mix remaining butter with flour to make a roux, then stir into the liquid to thicken.
- 3 Add the cooked duck pieces to the sauce. Season with salt, pepper, and ketchup. Warm gently without boiling.
- 4 Fry or toast bread strips. Serve the hashed duck over the bread sippets.
