Haricot Bean Purée Toast With Spinach And Eggs

Ingredients

  • 1 pint water
  • 1/2 pint soaked haricot beans
  • 1 tablespoon cream or milk
  • 1 teaspoon lemon juice
  • 1/2 teaspoon salt
  • A very little grated nutmeg
  • A very little pepper
  • A little cooked spinach
  • 4 eggs
  • 4 rounds hot buttered toast

Method

  1. 1 Stew the haricot beans gently in water for three hours.
  2. 2 Rub the cooked beans through a wire sieve with a wooden spoon.
  3. 3 Stir in cream, salt, lemon juice, pepper, and nutmeg to create a smooth cream.
  4. 4 Poach or bake the eggs.
  5. 5 Layer the haricot cream on toast, add a layer of cooked spinach, then top with an egg.
