Haricot Bean Purée Toast With Spinach And Eggs
Ingredients
- 1 pint water
- 1/2 pint soaked haricot beans
- 1 tablespoon cream or milk
- 1 teaspoon lemon juice
- 1/2 teaspoon salt
- A very little grated nutmeg
- A very little pepper
- A little cooked spinach
- 4 eggs
- 4 rounds hot buttered toast
Method
- 1 Stew the haricot beans gently in water for three hours.
- 2 Rub the cooked beans through a wire sieve with a wooden spoon.
- 3 Stir in cream, salt, lemon juice, pepper, and nutmeg to create a smooth cream.
- 4 Poach or bake the eggs.
- 5 Layer the haricot cream on toast, add a layer of cooked spinach, then top with an egg.
