Haricot Bean And Spinach Souffle
Ingredients
- 4 tablespoons finely minced haricot beans
- 3 tablespoons minced spinach
- 2 eggs
- Salt and pepper to taste
Method
- 1 Preheat oven to 350°F. Ensure haricot beans and spinach are previously cooked, seasoned, and finely minced.
- 2 In a bowl, mix the minced beans and spinach with salt and pepper to taste.
- 3 Separate the eggs. Beat the yolks and stir them into the bean and spinach mixture.
- 4 Beat the egg whites until they form stiff peaks (a stiff froth).
- 5 Gently fold the beaten egg whites into the bean mixture until well combined.
- 6 Pour the mixture into a well-buttered pie dish and bake for 30 to 45 minutes.
- 7 Remove from the dish immediately before serving.
