Hard Boiled Egg Salad Dressing

Ingredients

  • 2 eggs
  • 1 tbsp water or fine double cream
  • 2 tbsp oil or melted butter
  • 1 tsp salt
  • 1 tsp made mustard
  • 3 tbsp vinegar
  • Fresh salad herbs (e.g., lettuce, herbs)

Method

  1. 1 Boil eggs for 12 minutes, then cool in cold water. Ensure yolks are hard and cold.
  2. 2 Rub egg yolks through a sieve with a wooden spoon. Mix with water or cream.
  3. 3 Add oil or melted butter and mix well. Stir in salt and mustard until smooth.
  4. 4 Gradually add vinegar, rubbing until thoroughly incorporated. Chop egg whites.
  5. 5 Arrange fresh, washed, and dried salad herbs in a dish. Pour sauce over side.
  6. 6 Garnish with chopped egg whites. Do not stir until ready to eat.
