Hard Boiled Egg Salad Dressing
Ingredients
- 2 eggs
- 1 tbsp water or fine double cream
- 2 tbsp oil or melted butter
- 1 tsp salt
- 1 tsp made mustard
- 3 tbsp vinegar
- Fresh salad herbs (e.g., lettuce, herbs)
Method
- 1 Boil eggs for 12 minutes, then cool in cold water. Ensure yolks are hard and cold.
- 2 Rub egg yolks through a sieve with a wooden spoon. Mix with water or cream.
- 3 Add oil or melted butter and mix well. Stir in salt and mustard until smooth.
- 4 Gradually add vinegar, rubbing until thoroughly incorporated. Chop egg whites.
- 5 Arrange fresh, washed, and dried salad herbs in a dish. Pour sauce over side.
- 6 Garnish with chopped egg whites. Do not stir until ready to eat.
