Ham Potato And Onion Pie
Ingredients
- 1 quart diced potatoes
- 1 cup finely chopped onions
- 2 cups flour
- 1 teaspoon salt
- 2 teaspoons baking powder
- 6 tablespoons shortening
- 1/2 cup ice-cold water
- Fresh baked ham, cut into neat pieces
- 2 cups highly seasoned gravy
Method
- 1 Dice potatoes and chop onions. Boil in water until tender, then drain.
- 2 Sift flour, salt, and baking powder. Rub in shortening, then mix with ice water to form dough.
- 3 Roll out pastry and line a shallow pan. Layer potatoes, onions, and ham, seasoning between layers.
- 4 Add a second layer of potatoes, season, and pour in gravy. Top with crust, seal edges, and brush with water.
- 5 Bake in a slow oven (300°F) for one hour.
