Ham Bone Split Pea Soup
Ingredients
- 1 lb split peas
- 3 quarts water
- 1 ham bone
- salt to taste
- 2 carrots, sliced
- 1 stalk celery, chopped
- 1 large onion, chopped
- pepper to taste
- milk for diluting
- toasted croutons for serving
Method
- 1 Wash the split peas and place them in a large pot with cold water, the ham bone, carrots, celery, and onion.
- 2 Simmer the mixture for three hours or until the peas are very soft and the soup is thick.
- 3 Remove the ham bone. Force the pea mixture through a coarse sieve back into the pot.
- 4 Season with salt and pepper to taste. Dilute with milk if a thinner consistency is desired.
- 5 Serve hot with toasted croutons on the side or in the bowl.
