Ham Bone Split Pea Soup

Ingredients

  • 1 lb split peas
  • 3 quarts water
  • 1 ham bone
  • salt to taste
  • 2 carrots, sliced
  • 1 stalk celery, chopped
  • 1 large onion, chopped
  • pepper to taste
  • milk for diluting
  • toasted croutons for serving

Method

  1. 1 Wash the split peas and place them in a large pot with cold water, the ham bone, carrots, celery, and onion.
  2. 2 Simmer the mixture for three hours or until the peas are very soft and the soup is thick.
  3. 3 Remove the ham bone. Force the pea mixture through a coarse sieve back into the pot.
  4. 4 Season with salt and pepper to taste. Dilute with milk if a thinner consistency is desired.
  5. 5 Serve hot with toasted croutons on the side or in the bowl.
