Ham And Rice Stuffed Peppers

Ingredients

  • 6 sweet peppers
  • 2 tbsp ham fat or butter
  • 1 small onion, chopped
  • 1/2 tsp salt
  • dash of pepper
  • 1 1/2 cups steamed rice
  • 1/2 cup bread crumbs
  • 1/2 cup finely chopped boiled ham
  • 2 tbsp chopped parsley
  • 1 tsp celery salt
  • milk, as needed

Method

  1. 1 Wash peppers, cut off tops near the stem, and remove pulp and seeds. Wash thoroughly to remove loose seeds.
  2. 2 Melt fat or butter in a pan. Add onion, salt, and pepper; heat for several minutes.
  3. 3 Stir in rice, bread crumbs, ham, parsley, and celery salt. Add milk gradually until the mixture holds together.
  4. 4 Fill peppers with the stuffing mixture and place in a shallow pan with a small amount of water.
  5. 5 Bake until peppers are soft enough to be pierced with a fork. Serve hot.
