Ham And Port Sauce
Ingredients
- 1 oz ham, chopped
- 1½ tbsp sweet port or Muscat wine
- 1 tsp vinegar
- A little dried basil
- A pinch of spice
- ½ tsp sugar (optional, if using dry wine)
Method
- 1 Chop 1 oz of ham and pound it in a mortar.
- 2 Mix the ham with 1½ tbsp sweet port or Muscat, 1 tsp vinegar, dried basil, and a pinch of spice.
- 3 Boil the mixture, then pass it through a sieve.
- 4 Warm the sauce in a bain-marie and serve with roast meats.
