Ham And Port Sauce

Ingredients

  • 1 oz ham, chopped
  • 1½ tbsp sweet port or Muscat wine
  • 1 tsp vinegar
  • A little dried basil
  • A pinch of spice
  • ½ tsp sugar (optional, if using dry wine)

Method

  1. 1 Chop 1 oz of ham and pound it in a mortar.
  2. 2 Mix the ham with 1½ tbsp sweet port or Muscat, 1 tsp vinegar, dried basil, and a pinch of spice.
  3. 3 Boil the mixture, then pass it through a sieve.
  4. 4 Warm the sauce in a bain-marie and serve with roast meats.
