Ham And Pea Purée Soup
Ingredients
- 1 pint green peas
- 3 pints water
- 1 piece fat ham or bacon
- 2 carrots
- 1 onion
- 1 leek
- 1 bay leaf
- parsley
- pepper
- salt
- whole cooked peas
- mint
Method
- 1 Boil green peas, ham or bacon, carrots, onion, leek, bay leaf, parsley, pepper, and salt in 3 pints of water.
- 2 Simmer for 2-3 hours, stirring occasionally.
- 3 Pass the peas and onions through a fine sieve and return the strained liquid to the saucepan.
- 4 Boil up the mixture, add whole cooked peas and mint, then serve.
