Ham And Parsley Souffle With Cheese Sauce
Ingredients
- 2 tablespoons butter
- 3 tablespoons flour
- 1 cup milk
- 1/2 teaspoon salt
- 2 tablespoons chopped parsley

- 1 tablespoon parsley

- egg whites
Method
- 1 Cook breadcrumbs and milk together for two minutes. Remove from heat and mix in ham.
- 2 Beat egg yolks and add them to the mixture along with 1 tablespoon parsley, onion, and paprika.
- 3 Whip egg whites to stiff peaks and fold them into the mixture last.
- 4 Turn into a well-greased baking dish and bake in a 350°F oven for 35 minutes until firm.
- 5 For the sauce, melt butter and stir in flour until smooth. Slowly add milk, stirring constantly until thick.
- 6 Stir in remaining parsley and salt. Serve the sauce immediately with the soufflé.
