Ham And Onion Stuffed Potatoes

Ingredients

  • 8 very large potatoes
  • 2 minced onions
  • 2 oz minced cold ham or pork
  • 2 oz butter
  • 2-3 egg yolks
  • fresh parsley
  • salt

Method

  1. 1 Wash and peel potatoes. Make a slit in each and scoop out the inside, leaving a shell about 1/8 inch thick.
  2. 2 Mash the scooped potato flesh with minced onions, ham/pork, butter, parsley, and egg yolks. Season with salt and mix thoroughly.
  3. 3 Butter the inside of the potato shells and fill them with the mixture.
  4. 4 Place potatoes in a buttered baking dish and bake at 350°F for 30 minutes, or until golden brown.
