Ham And Onion Stuffed Potatoes
Ingredients
- 8 very large potatoes
- 2 minced onions
- 2 oz minced cold ham or pork
- 2 oz butter
- 2-3 egg yolks
- fresh parsley
- salt
Method
- 1 Wash and peel potatoes. Make a slit in each and scoop out the inside, leaving a shell about 1/8 inch thick.
- 2 Mash the scooped potato flesh with minced onions, ham/pork, butter, parsley, and egg yolks. Season with salt and mix thoroughly.
- 3 Butter the inside of the potato shells and fill them with the mixture.
- 4 Place potatoes in a buttered baking dish and bake at 350°F for 30 minutes, or until golden brown.
