Ham And Herb Stuffed Artichokes
Ingredients
- 6 artichokes
- 1/8 lb lean ham
- 1/4 small onion
- 1 small clove garlic
- celery or parsley leaves
- pinch of dry mushrooms, softened in water
- breadcrumbs
- pinch of pepper
- salt
- oil
Method
- 1 Cut the stalk at the base, remove small outside leaves, and wash the artichokes.
- 2 Cut off the top, open internal leaves, and trim the bottom to remove the hairy choke.
- 3 Set aside small interior leaves to use in the stuffing.
- 4 Chop the ham and grind it together with the onion, garlic, herbs, mushrooms, breadcrumbs, and pepper.
- 5 Fill the artichokes with the mixture and place them upright in a saucepan with oil, salt, and pepper to cook.
