Ingredients

  • 6 artichokes
  • 1/8 lb lean ham
  • 1/4 small onion
  • 1 small clove garlic
  • celery or parsley leaves
  • pinch of dry mushrooms, softened in water
  • breadcrumbs
  • pinch of pepper
  • salt
  • oil

Method

  1. 1 Cut the stalk at the base, remove small outside leaves, and wash the artichokes.
  2. 2 Cut off the top, open internal leaves, and trim the bottom to remove the hairy choke.
  3. 3 Set aside small interior leaves to use in the stuffing.
  4. 4 Chop the ham and grind it together with the onion, garlic, herbs, mushrooms, breadcrumbs, and pepper.
  5. 5 Fill the artichokes with the mixture and place them upright in a saucepan with oil, salt, and pepper to cook.
