Ham And Egg Toast
Ingredients
- 4 oz boiled or fried ham, chopped fine
- 2 egg yolks, well beaten
- 1 tbsp butter
- 2-3 tbsp cream or milk
- Salt and pepper to taste
- Toast slices
- Melted butter for spreading
Method
- 1 In a pan, combine chopped ham, beaten egg yolks, butter, and enough cream or milk to create a soft mixture. Season with pepper.
- 2 Stir the mixture over heat until it thickens slightly, then remove from heat.
- 3 Quickly dip toast slices into hot salted water, then spread with melted butter.
- 4 Top the buttered toast with the hot ham mixture and serve immediately.
