Ingredients

  • 4 oz boiled or fried ham, chopped fine
  • 2 egg yolks, well beaten
  • 1 tbsp butter
  • 2-3 tbsp cream or milk
  • Salt and pepper to taste
  • Toast slices
  • Melted butter for spreading

Method

  1. 1 In a pan, combine chopped ham, beaten egg yolks, butter, and enough cream or milk to create a soft mixture. Season with pepper.
  2. 2 Stir the mixture over heat until it thickens slightly, then remove from heat.
  3. 3 Quickly dip toast slices into hot salted water, then spread with melted butter.
  4. 4 Top the buttered toast with the hot ham mixture and serve immediately.
