Ingredients

  • 1 cup chopped ham (including some fat)
  • 1 tablespoon butter
  • 1 tablespoon all-purpose flour
  • 1 1/3 cups milk
  • 2 hard-boiled eggs, separated
  • Salt and pepper to taste
  • 4 round slices of toast
  • Fresh parsley for garnish

Method

  1. 1 Chop the ham finely. Melt butter in a saucepan over medium heat.
  2. 2 Stir in flour to make a roux. Gradually whisk in milk until smooth.
  3. 3 Cook, stirring constantly, until the sauce thickens slightly.
  4. 4 Stir in the chopped ham, mashed egg whites, salt, and pepper.
  5. 5 Pour the mixture over toasted bread on a hot platter.
  6. 6 Grate the reserved egg yolks over the top and garnish with parsley.
