  • 8 medium sweet bell peppers
  • 1 cup minced ham and chicken
  • 4 hard-boiled eggs, chopped
  • 1 bunch celery, chopped
  • 1 Spanish onion, chopped
  • Salad dressing

Method

  1. 1 Cut off the tops of the bell peppers, saving the tops with stems. Remove seeds and white pith without breaking the peppers.
  2. 2 Place the hollowed peppers in ice water for 30 minutes to crisp.
  3. 3 Mix minced ham and chicken, chopped hard-boiled eggs, chopped celery, and chopped Spanish onion.
