Ham And Chicken Stuffed Bell Peppers
Ingredients
- 8 medium sweet bell peppers
- 1 cup minced ham and chicken
- 4 hard-boiled eggs, chopped
- 1 bunch celery, chopped
- 1 Spanish onion, chopped
- Salad dressing
Method
- 1 Cut off the tops of the bell peppers, saving the tops with stems. Remove seeds and white pith without breaking the peppers.
- 2 Place the hollowed peppers in ice water for 30 minutes to crisp.
- 3 Mix minced ham and chicken, chopped hard-boiled eggs, chopped celery, and chopped Spanish onion.
- 4 Moisten the mixture with salad dressing, fill the pepper shells, replace the tops, and serve.
