Ham And Bacon Vegetable Soup
Ingredients
- 1 cup rice or macaroni
- 2 cups stock
- 1 cup mixed vegetables
- 2 oz ham, diced
- 2 oz bacon, diced
- 1 onion, diced
- 2 tbsp butter
- 1 tbsp chopped parsley
- 1 clove garlic
- 2 bay leaves
Method
- 1 Boil the vegetables in the stock until tender, adding harder vegetables first.
- 2 In a separate pan, sauté the onion in butter until soft. Add the bacon and ham.
- 3 Add the rice or macaroni, sautéed meat mixture, parsley, and garlic to the soup.
- 4 Simmer until the pasta is cooked. Remove the garlic clove and bay leaves before serving.
