Ham And Asparagus Crustless Quiches
Ingredients
- 1 cup cooked asparagus, cut into bits
- 1 cup cold cooked ham, cut into small cubes
- 2 tablespoons butter
- 2 tablespoons flour
- 1 cup liquid from cooking asparagus
- 1 teaspoon lemon juice
- Salt and nutmeg to taste
- 2 eggs, beaten
- Buttered cracker crumbs for topping
Method
- 1 Preheat oven to 350°F. Combine the ham and asparagus bits in a bowl.
- 2 Melt butter in a saucepan, stir in flour to make a roux. Whisk in asparagus cooking liquid, lemon juice, salt, and nutmeg until thickened.
- 3 Remove from heat and stir in beaten eggs, ham, and asparagus.
- 4 Pour mixture into buttered small cups. Top with buttered cracker crumbs.
- 5 Bake until golden brown, about 15-20 minutes.
