Ham And Anchovy Cheese Sauce
Ingredients
- ½ cup cold cooked ham, finely minced
- ½ teaspoon anchovy paste
- pinch cayenne
- pinch pounded mace
- ½ cup milk
- 1 egg, well beaten
Method
- 1 Combine minced ham, anchovy paste, cayenne, and mace in a saucepan.
- 2 Add milk and beaten egg, stirring constantly over heat until the mixture thickens.
- 3 Remove from heat and spread thinly over dry buttered toast.
- 4 Optionally top each slice with a poached egg before serving.
