  • ½ cup cold cooked ham, finely minced
  • ½ teaspoon anchovy paste
  • pinch cayenne
  • pinch pounded mace
  • ½ cup milk
  • 1 egg, well beaten

Method

  1. 1 Combine minced ham, anchovy paste, cayenne, and mace in a saucepan.
  2. 2 Add milk and beaten egg, stirring constantly over heat until the mixture thickens.
  3. 3 Remove from heat and spread thinly over dry buttered toast.
  4. 4 Optionally top each slice with a poached egg before serving.
