Guinea Hen Pot Pie With Peas

Ingredients

  • 2 guinea hens
  • 7 cups boiling water
  • 1 piece carrot
  • 1 small onion
  • 1 stalk celery
  • 1 cup peas
  • 4 boiled onions
  • plain pastry

Method

  1. 1 Draw and singe guinea hens. Remove wings, thighs, and legs; leave breast whole. Break back carcass.
  2. 2 Place carcass in saucepan with 7 cups boiling water, carrot, onion, and celery. Steam slowly until tender.
  3. 3 Remove thighs and breast. Pick meat from carcass and add to 2.5 cups stock. Season and thicken slightly to make gravy.
  4. 4 Place legs and wings in casserole. Add peas, gravy, and boiled onions. Cover with plain pastry crust.
  5. 5 Bake in a moderate oven (350°F) for 30 minutes.
