Guinea Hen Pot Pie With Peas
Ingredients
- 2 guinea hens
- 7 cups boiling water
- 1 piece carrot
- 1 small onion
- 1 stalk celery
- 1 cup peas
- 4 boiled onions
- plain pastry
Method
- 1 Draw and singe guinea hens. Remove wings, thighs, and legs; leave breast whole. Break back carcass.
- 2 Place carcass in saucepan with 7 cups boiling water, carrot, onion, and celery. Steam slowly until tender.
- 3 Remove thighs and breast. Pick meat from carcass and add to 2.5 cups stock. Season and thicken slightly to make gravy.
- 4 Place legs and wings in casserole. Add peas, gravy, and boiled onions. Cover with plain pastry crust.
- 5 Bake in a moderate oven (350°F) for 30 minutes.
