Gruyere Parmesan Cheese Balls

Ingredients

  • 2 tablespoons flour
  • Milk (for white sauce)
  • 3 egg yolks
  • 4 ounces Gruyère cheese, finely grated
  • Parmesan cheese, finely grated
  • Juice of ½ lemon
  • Pinch of cayenne pepper
  • Breadcrumbs
  • Oil or fat for deep frying

Method

  1. 1 Make a white sauce using 2 tablespoons of flour and milk. Stir in the 3 egg yolks.
  2. 2 Mix in the grated Gruyère and Parmesan cheeses, lemon juice, and cayenne. Let the mixture cool completely.
  3. 3 Form the cooled cheese mixture into small balls and roll them in breadcrumbs.
  4. 4 Deep fry the balls in hot oil until golden brown. Drain and serve immediately.
