Ground Beef And Vegetable Noodle Soup
Ingredients
- 1 tablespoon vegetable oil
- 1 pound lean ground beef
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 can (14.5 oz) low sodium beef broth
- 1 can (14.5 oz) sliced carrots, drained
- 1 can (14.5 oz) no salt added cut green beans
- 1 can (14.5 oz) no salt added stewed tomatoes
- 1 teaspoon dried basil
- 1 cup cooked egg noodles
Method
- 1 Heat oil in a 4-quart saucepan over medium-high heat. Add ground beef and cook until browned, stirring frequently. Remove beef with a slotted spoon.
- 2 In the same pan, cook onion and garlic over medium heat until tender-crisp.
- 3 Add beef broth, carrots, green beans, stewed tomatoes, basil, and the cooked beef. Bring to a boil.
- 4 Reduce heat to low, cover, and simmer for 10 to 15 minutes to blend flavors, stirring occasionally.
- 5 Stir in cooked egg noodles before serving.
