Ground Beef And Vegetable Casserole

Ingredients

  • 1 pound onion, sliced
  • 2 medium potatoes, sliced
  • 1 1/2 cups carrots, sliced
  • 1/4 teaspoon black pepper
  • 1 pound 90% lean ground beef, browned and drained
  • 1 can green beans
  • 1 can low-sodium tomato soup

Method

  1. 1 Preheat oven to 350°F. Lightly grease a baking dish with cooking spray.
  2. 2 Layer the sliced onions, potatoes, carrots, and black pepper in the bottom of the prepared dish.
  3. 3 Spread the browned and drained ground beef evenly over the vegetable layer.
  4. 4 Add the green beans on top of the beef, then pour the tomato soup over everything.
  5. 5 Cover the dish and bake for 45 minutes until vegetables are tender.
  6. 6 Uncover and bake for 15 additional minutes to heat through and brown slightly.
