Ground Beef And Bean Burritos
Ingredients
- 1 medium head lettuce
- 1 medium green bell pepper
- 1 large tomato
- 1 small jalapeño pepper
- 1 medium red onion
- 2 cloves garlic
- 1 ounce low-fat cheddar cheese
- 1 can black beans (no salt added)
- 2 2/3 pounds lean ground beef (turkey or chicken)
- 1/2 cup frozen corn
- 3/4 cup water
- 1 teaspoon chili powder
- 1/4 teaspoon salt
- 8 teaspoons ground cumin
- 8 (6-inch) whole wheat flour tortillas
- dash of ground black pepper
Method
- 1 Rinse and chop lettuce, bell pepper, tomato, jalapeño, onion, and garlic. Grate tomato and onion into a bowl. Grate the cheese.
- 2 Drain and rinse the black beans. In a large skillet over medium-high heat, cook the meat, bell pepper, and garlic until browned. Drain excess fat.
- 3 Stir in corn, beans, water, chili powder, salt, cumin, and pepper. Bring to a boil, then lower heat, cover, and simmer for 10 minutes until liquid is mostly gone.
- 4 Mix the grated tomato, onion, and jalapeño with a pinch of salt to make a quick salsa. Divide meat mixture among tortillas.
- 5 Top each tortilla with grated cheese, salsa, and lettuce. Roll up and serve immediately.
