Grilled Zucchini, Squash And Potato Packets
Ingredients
- 2 small zucchini, sliced
- 4 small yellow squash, sliced
- 1/2 small red potatoes, scrubbed and sliced
- 1/2 small red onion, sliced
- 1/4 cup bell pepper (red or green), seeded and sliced
- Light Italian salad dressing, salt and pepper to taste
Method
- 1 Heat grill to medium heat (350°F). Wash and slice all vegetables.
- 2 Toss vegetables in a large bowl with dressing, salt, and pepper until coated.
- 3 Tear two large squares of aluminum foil. Place half the vegetable mixture on each square.
- 4 Fold foil over vegetables and seal edges tightly to form packets.
- 5 Grill for 20-30 minutes until potatoes are tender. Carefully open packets to release steam.
