Grilled Tilapia Tacos With Peach Salsa
Ingredients
- 1 cup chopped peaches (drained, rinsed)
- 1/2 cup finely chopped red bell pepper
- 1/4 cup finely chopped red onion
- 1 jalapeno pepper (rinsed, seeded, finely chopped)
- 1 tablespoon finely chopped fresh cilantro
- 2 teaspoons lemon juice
- 1 lb tilapia fillets
- 1 tablespoon chili powder
- 1/4 teaspoon low-sodium adobo seasoning
- 1 package low-sodium sazon seasoning
- 8 (6-inch) flour tortillas
Method
- 1 In a medium bowl, combine peaches, bell pepper, onion, jalapeno, cilantro, and lemon juice. Cover and refrigerate until ready to use.
- 2 Pat tilapia fillets dry. In a small bowl, mix chili powder, adobo seasoning, and sazon packet.
- 3 Rub the spice mixture evenly over the fish fillets to coat completely.
- 4 Heat a grill or grill pan over medium-high heat. Place fish on greased grates and cook for about 8 minutes, flipping once, until opaque and flakes easily.
- 5 Thinly slice the cooked fish. Warm tortillas and fill each with half a fillet and about 1/3 cup of salsa.
