Grilled Sweet Potatoes, Corn, And Eggplant

  • 2 tablespoons vegetable oil
  • 1 garlic clove, finely chopped
  • 3 sweet potatoes, cut into 1-inch slices
  • 1 ear corn, cut into 2-inch sections
  • 12 eggplant slices, 1/2-inch thick
  • Green onions, trimmed

Method

  1. 1 Mix oil and garlic in a large bowl. Add vegetables and toss to coat.
