Grilled Sweet Potatoes, Corn, And Eggplant
Ingredients
- 2 tablespoons vegetable oil
- 1 garlic clove, finely chopped
- 3 sweet potatoes, cut into 1-inch slices
- 1 ear corn, cut into 2-inch sections
- 12 eggplant slices, 1/2-inch thick
- Green onions, trimmed
Method
- 1 Mix oil and garlic in a large bowl. Add vegetables and toss to coat.
- 2 Place vegetables on a broiler pan or grill. Cook for 10 minutes, turning twice until tender.
- 3 Transfer vegetables to a platter and serve immediately.
