Grilled Shrimp With Cantaloupe Avocado Salsa

Ingredients

  • 1 lime (divided)
  • 1 avocado, cubed
  • 2 cups diced cantaloupe
  • 1/4 cup chopped red onions
  • 1 cup unsalted canned black beans, drained and rinsed
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper
  • 2 tablespoons chopped fresh cilantro
  • 1 pound large or jumbo shrimp, uncooked, peeled with tails on
  • 1 tablespoon canola oil
  • 1 clove garlic, diced
  • 4 bamboo skewers

Method

  1. 1 Preheat grill. Slice lime in half and squeeze juice from one half into a small bowl.
  2. 2 Add avocado, cantaloupe, red onions, black beans, salt, pepper, cilantro, and lime juice to the bowl; gently mix to combine.
  3. 3 Skewer shrimp on bamboo skewers. Mix canola oil and diced garlic in a small dish.
  4. 4 Coat shrimp with the oil-garlic mixture. Grill for 4-5 minutes until cooked through.
  5. 5 Serve shrimp topped with salsa and garnish with lime wedges.
