Grilled Shrimp With Cantaloupe Avocado Salsa
Ingredients
- 1 lime (divided)
- 1 avocado, cubed
- 2 cups diced cantaloupe
- 1/4 cup chopped red onions
- 1 cup unsalted canned black beans, drained and rinsed
- 1/4 teaspoon salt
- 1/8 teaspoon black pepper
- 2 tablespoons chopped fresh cilantro
- 1 pound large or jumbo shrimp, uncooked, peeled with tails on
- 1 tablespoon canola oil
- 1 clove garlic, diced
- 4 bamboo skewers
Method
- 1 Preheat grill. Slice lime in half and squeeze juice from one half into a small bowl.
- 2 Add avocado, cantaloupe, red onions, black beans, salt, pepper, cilantro, and lime juice to the bowl; gently mix to combine.
- 3 Skewer shrimp on bamboo skewers. Mix canola oil and diced garlic in a small dish.
- 4 Coat shrimp with the oil-garlic mixture. Grill for 4-5 minutes until cooked through.
- 5 Serve shrimp topped with salsa and garnish with lime wedges.
