Grilled Salmon Pineapple Skewers
Ingredients
- 3 pounds salmon
- 1 cup cherry tomatoes
- 2 cups cubed pineapple
- Cooked brown rice
- 1 raw lemon
- Kosher salt
- Freshly ground pepper
- Paprika
- 8 skewers
- 1/2 cup canola oil
Method
- 1 Cook brown rice according to package instructions and set aside.
- 2 Pat salmon dry, cut into 2-inch cubes, and coat with salt, pepper, and paprika.
- 3 Cut tomatoes in half and pineapple into cubes. Thread salmon, tomato, and pineapple onto skewers.
- 4 Heat oil in a large skillet over medium-high heat. Cook skewers, turning every 2 minutes, squeezing lemon juice over them as they cook.
- 5 Serve skewers over rice with an extra squeeze of lemon if desired.
