Grilled Salmon Pineapple Skewers

Ingredients

  • 3 pounds salmon
  • 1 cup cherry tomatoes
  • 2 cups cubed pineapple
  • Cooked brown rice
  • 1 raw lemon
  • Kosher salt
  • Freshly ground pepper
  • Paprika
  • 8 skewers
  • 1/2 cup canola oil

Method

  1. 1 Cook brown rice according to package instructions and set aside.
  2. 2 Pat salmon dry, cut into 2-inch cubes, and coat with salt, pepper, and paprika.
  3. 3 Cut tomatoes in half and pineapple into cubes. Thread salmon, tomato, and pineapple onto skewers.
  4. 4 Heat oil in a large skillet over medium-high heat. Cook skewers, turning every 2 minutes, squeezing lemon juice over them as they cook.
  5. 5 Serve skewers over rice with an extra squeeze of lemon if desired.
