Grilled Pork Tacos With Pico De Gallo
Ingredients
- 1 pound pork tenderloin
- 2 tablespoons olive oil
- 2 teaspoons paprika
- 1 teaspoon onion powder
- 1 teaspoon garlic powder
- 1 teaspoon salt
- 1 teaspoon black pepper
- 12 corn tortillas (4 inches across)
- 3 tomatoes, cut into small cubes
- 1/2 cup fresh cilantro, chopped
- 1/2 cup red onion, cut into small cubes
- 2 serrano peppers, chopped
- 2 lemons, juiced
- Salt and pepper to taste
Method
- 1 In a small bowl, mix paprika, onion powder, garlic powder, salt, and pepper.
- 2 Remove silver skin from pork tenderloin, rub with olive oil, and coat with seasoning.
- 3 Grill pork at 400°F over indirect heat for 6 minutes per side, until internal temp reaches 145°F. Rest 3 minutes, then chop into small pieces.
- 4 In a bowl, combine tomatoes, cilantro, red onion, serrano peppers, and lemon juice. Season with salt and pepper.
- 5 Heat tortillas and assemble tacos with pork and pico de gallo.
