Grilled Herb Crusted Sturgeon
Ingredients
- 1 piece sturgeon steak or slice, 1 inch thick
- Olive oil
- Wine vinegar
- Salt
- Fresh rosemary sprigs
- Fresh thyme sprigs
- Fresh parsley sprigs
- Butter (optional, for basting)
- Lemon slices or orange juice (optional, for serving)
Method
- 1 Salt the sturgeon and steep it in a mixture of olive oil and wine vinegar.
- 2 Place the fish on a grill over a moderate fire. Add rosemary, thyme, and parsley sprigs to the grill.
- 3 Baste the fish frequently with the oil and vinegar mixture while broiling until cooked through.
- 4 Serve immediately with the remaining sauce, optionally basted with butter and garnished with lemon slices or orange juice.
