Grilled Herb Crusted Sturgeon

  • 1 piece sturgeon steak or slice, 1 inch thick
  • Olive oil
  • Wine vinegar
  • Salt
  • Fresh rosemary sprigs
  • Fresh thyme sprigs
  • Fresh parsley sprigs
  • Butter (optional, for basting)
  • Lemon slices or orange juice (optional, for serving)

Method

  1. 1 Salt the sturgeon and steep it in a mixture of olive oil and wine vinegar.
  2. 2 Place the fish on a grill over a moderate fire. Add rosemary, thyme, and parsley sprigs to the grill.
  3. 3 Baste the fish frequently with the oil and vinegar mixture while broiling until cooked through.
  4. 4 Serve immediately with the remaining sauce, optionally basted with butter and garnished with lemon slices or orange juice.
