Grilled Haddock With Lemon Butter
Ingredients
- 1 cleaned haddock (or eglefin)
- Salt and pepper
- Flour for dredging
- 2 ounces butter
- Minced parsley
- Lemon juice
Method
- 1 Cut the fish open at the back on each side of the bone. Dust with pepper and salt, then dip in flour.
- 2 Place on a gridiron over a clear fire and cook for about 20 minutes, turning carefully from time to time.
- 3 Remove from fire, place two ounces of butter on the back of the fish, and put in the oven to melt the butter.
- 4 Transfer to a hot platter and sprinkle with minced parsley and heated lemon juice.
