Grilled Haddock With Lemon Butter

Ingredients

  • 1 cleaned haddock (or eglefin)
  • Salt and pepper
  • Flour for dredging
  • 2 ounces butter
  • Minced parsley
  • Lemon juice

Method

  1. 1 Cut the fish open at the back on each side of the bone. Dust with pepper and salt, then dip in flour.
  2. 2 Place on a gridiron over a clear fire and cook for about 20 minutes, turning carefully from time to time.
  3. 3 Remove from fire, place two ounces of butter on the back of the fish, and put in the oven to melt the butter.
  4. 4 Transfer to a hot platter and sprinkle with minced parsley and heated lemon juice.
