Grilled Fish With Lemon Butter Sauce
Ingredients
- large fish (black striped bass, cod, white fish, rock fish, or shad)
- juice of 1 lemon
- 2 tablespoons melted butter
- 1 tablespoon catsup
- 1 tablespoon minced parsley
- 1 tablespoon Worcestershire sauce
- ½ cup water
- 1 tablespoon cornstarch
- ¼ teaspoon mustard
- 1 teaspoon paprika
- 1 teaspoon salt
Method
- 1 Scale, clean, and split the fish down the back. Remove fins and head.
- 2 Place fish in a well-greased gridiron and cook until brown.
- 3 Combine lemon juice, butter, catsup, parsley, Worcestershire sauce, water, cornstarch, mustard, paprika, and salt in a saucepan.
- 4 Stir to blend, bring to a boil, and cook slowly for three minutes.
- 5 Lift fish to a hot dish, spread the sauce over it, and serve.
