Grilled Fish With Lemon Butter Sauce

Ingredients

  • large fish (black striped bass, cod, white fish, rock fish, or shad)
  • juice of 1 lemon
  • 2 tablespoons melted butter
  • 1 tablespoon catsup
  • 1 tablespoon minced parsley
  • 1 tablespoon Worcestershire sauce
  • ½ cup water
  • 1 tablespoon cornstarch
  • ¼ teaspoon mustard
  • 1 teaspoon paprika
  • 1 teaspoon salt

Method

  1. 1 Scale, clean, and split the fish down the back. Remove fins and head.
  2. 2 Place fish in a well-greased gridiron and cook until brown.
  3. 3 Combine lemon juice, butter, catsup, parsley, Worcestershire sauce, water, cornstarch, mustard, paprika, and salt in a saucepan.
  4. 4 Stir to blend, bring to a boil, and cook slowly for three minutes.
  5. 5 Lift fish to a hot dish, spread the sauce over it, and serve.
