Grilled Chicken With Pineapple And Vegetables

Ingredients

  • 1 1/2 cups pineapple juice
  • 1/4 cup apple cider vinegar
  • 3 tablespoons brown sugar
  • 1 1/2 tablespoons light soy sauce
  • 1 tablespoon minced ginger
  • 1 tablespoon Dijon mustard
  • 1 cup dry whole wheat couscous
  • 1 pound boneless skinless chicken breasts, cut into 4 portions
  • 1 tablespoon olive oil
  • 1/8 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 sweet yellow onion, cut into wedges
  • 2 large zucchini, cut into chunks
  • 1 red pepper, cut into 8 strips
  • 1 orange pepper, cut into 8 strips
  • 8 pineapple spears
  • green onions, sliced

Method

  1. 1 Combine pineapple juice, vinegar, brown sugar, soy sauce, ginger, and mustard in a saucepan. Bring to a boil and simmer for 15 minutes to make the glaze.
  2. 2 Cook couscous according to package directions. Meanwhile, toss chicken with olive oil, salt, and pepper.
  3. 3 Preheat grill to medium heat. Grill chicken for 2 minutes per side, then baste with glaze and cook 5-6 minutes until done.
  4. 4 Grill onion, zucchini, peppers, and pineapple spears, basting with glaze, for 3-5 minutes until tender and grill-marked.
  5. 5 Serve chicken and vegetables over couscous. Garnish with sliced green onions.
