Grilled Chicken Quinoa Salad With Avocado
Ingredients
- 1/4 cup fresh or bottled lemon juice
- 3/4 teaspoon fresh basil
- 1 avocado, cut into chunks
- 1/4 cup olive oil (divided)
- 1/2 teaspoon salt
- 1 teaspoon ground black pepper (divided)
- 1 small boneless, skinless chicken breast (about 1 lb)
- 1/2 large red bell pepper
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 3 cups water
- 1 1/2 teaspoons sodium-free chicken bouillon
- 1 1/2 cups red quinoa (uncooked/dry)
Method
- 1 Heat grill. Mix lemon juice, basil, and 1/2 tsp black pepper; drizzle over avocado chunks and toss. Set aside.
- 2 Cut chicken breasts in half. Mix remaining olive oil, salt, and pepper; brush on chicken and bell pepper. Grill until done.
- 3 While grilling, heat remaining oil in a pan. Sauté onion and garlic until tender. Add water, bouillon, and quinoa.
- 4 Bring to boil, cover, reduce heat, and simmer until liquid is absorbed and quinoa is cooked, about 15-20 minutes.
- 5 Slice grilled pepper. Combine quinoa, chicken, pepper, and avocado in a bowl. Toss gently and serve.
