Griddle Yeast Muffins
Ingredients
- 1 cup scalded milk
- 2 tablespoons Crisco
- 1 cup boiling water
- 1/4 cup sugar
- 1 1/2 teaspoons salt
- 1/2 cake yeast
- 1 egg
- 4 cups flour
Method
- 1 Add Crisco, salt, and half the sugar to the milk and water.
- 2 When lukewarm, add yeast mixed with remaining sugar, beaten egg, and flour. Beat thoroughly, cover, and let rise until light.
- 3 Place greased muffin rings on a hot griddle greased with Crisco. Fill half full with batter.
- 4 Cook slowly until well risen and browned underneath. Turn muffins and rings to brown the other side.
- 5 When cold, split open, toast, and serve with marmalade.
