Griddle Yeast Muffins

Ingredients

  • 1 cup scalded milk
  • 2 tablespoons Crisco
  • 1 cup boiling water
  • 1/4 cup sugar
  • 1 1/2 teaspoons salt
  • 1/2 cake yeast
  • 1 egg
  • 4 cups flour

Method

  1. 1 Add Crisco, salt, and half the sugar to the milk and water.
  2. 2 When lukewarm, add yeast mixed with remaining sugar, beaten egg, and flour. Beat thoroughly, cover, and let rise until light.
  3. 3 Place greased muffin rings on a hot griddle greased with Crisco. Fill half full with batter.
  4. 4 Cook slowly until well risen and browned underneath. Turn muffins and rings to brown the other side.
  5. 5 When cold, split open, toast, and serve with marmalade.
