Griddle Fried Cream Scones

Ingredients

  • 2 cups flour
  • 4 tablespoons Crisco
  • 3 teaspoons baking powder
  • 2 teaspoons sugar
  • 1/2 teaspoon salt
  • 2 eggs, well beaten
  • 1/3 cup cream
  • 1 egg white

Method

  1. 1 Mix and sift flour, salt, sugar, and baking powder.
  2. 2 Rub in Crisco with fingertips.
  3. 3 Add beaten eggs and cream; knead lightly on a floured board.
  4. 4 Divide dough into four equal pieces, roll out, and cut into four small scones.
  5. 5 Lay scones on a hot griddle, brush with beaten egg white, and fry slowly on both sides.
