Griddle Fried Cream Scones
Ingredients
- 2 cups flour
- 4 tablespoons Crisco
- 3 teaspoons baking powder
- 2 teaspoons sugar
- 1/2 teaspoon salt
- 2 eggs, well beaten
- 1/3 cup cream
- 1 egg white
Method
- 1 Mix and sift flour, salt, sugar, and baking powder.
- 2 Rub in Crisco with fingertips.
- 3 Add beaten eggs and cream; knead lightly on a floured board.
- 4 Divide dough into four equal pieces, roll out, and cut into four small scones.
- 5 Lay scones on a hot griddle, brush with beaten egg white, and fry slowly on both sides.
