Griddle Fried Cornbread
Ingredients
- 1 tsp salt
- 2 cups cornmeal
- Boiling water (as needed)
- 3 eggs, beaten
- 1 cup milk
- 1 tsp baking powder
- Additional milk (if needed)
- Butter or ham/bacon fat for greasing
Method
- 1 Mix salt with cornmeal. Pour boiling water over to moisten and let stand for 10 minutes.
- 2 Stir in beaten eggs, milk, and baking powder. Thin with more milk if the batter is too thick.
- 3 Grease a griddle with butter or ham/bacon fat. Pour batter onto the hot griddle and bake until done.
