Griddle Fried Cornbread

Ingredients

  • 1 tsp salt
  • 2 cups cornmeal
  • Boiling water (as needed)
  • 3 eggs, beaten
  • 1 cup milk
  • 1 tsp baking powder
  • Additional milk (if needed)
  • Butter or ham/bacon fat for greasing

Method

  1. 1 Mix salt with cornmeal. Pour boiling water over to moisten and let stand for 10 minutes.
  2. 2 Stir in beaten eggs, milk, and baking powder. Thin with more milk if the batter is too thick.
  3. 3 Grease a griddle with butter or ham/bacon fat. Pour batter onto the hot griddle and bake until done.
