Griddle Cornmeal Pancakes
Ingredients
- 1 cup cornmeal
- 1 tsp salt
- 3 tbsp shortening
- 3 tbsp syrup
- 1 cup boiling water
- 2 cups cold water
- 1 egg
- 2 ½ cups flour
- 2 tbsp baking powder
Method
- 1 Place cornmeal in a mixing bowl and add salt, shortening, syrup, and boiling water. Beat to mix.
- 2 Add cold water, egg, flour, and baking powder. Beat hard to combine.
- 3 Pour batter onto a hot griddle and cook until golden brown on both sides.
