Griddle Cornmeal Pancakes

Ingredients

  • 1 cup cornmeal
  • 1 tsp salt
  • 3 tbsp shortening
  • 3 tbsp syrup
  • 1 cup boiling water
  • 2 cups cold water
  • 1 egg
  • 2 ½ cups flour
  • 2 tbsp baking powder

Method

  1. 1 Place cornmeal in a mixing bowl and add salt, shortening, syrup, and boiling water. Beat to mix.
  2. 2 Add cold water, egg, flour, and baking powder. Beat hard to combine.
  3. 3 Pour batter onto a hot griddle and cook until golden brown on both sides.
