Griddle Corn Fritters

Ingredients

  • 1 cup corn, grated
  • 1 egg
  • 1 tablespoon heavy cream
  • Salt to taste
  • 1 tablespoon melted butter (per pint of corn)
  • Milk as needed
  • Flour as needed (approx. 1 tablespoon per 2 eggs)

Method

  1. 1 Grate the corn and beat the eggs well.
  2. 2 Add the corn to the eggs by degrees, beating vigorously.
  3. 3 Season with salt and stir in melted butter.
  4. 4 Add milk and just enough flour to hold the mixture together.
  5. 5 Cook on a hot griddle until golden brown.
