Griddle Corn Fritters
Ingredients
- 1 cup corn, grated
- 1 egg
- 1 tablespoon heavy cream
- Salt to taste
- 1 tablespoon melted butter (per pint of corn)
- Milk as needed
- Flour as needed (approx. 1 tablespoon per 2 eggs)
Method
- 1 Grate the corn and beat the eggs well.
- 2 Add the corn to the eggs by degrees, beating vigorously.
- 3 Season with salt and stir in melted butter.
- 4 Add milk and just enough flour to hold the mixture together.
- 5 Cook on a hot griddle until golden brown.
