Griddle Corn Dodgers

Ingredients

  • 2 cups white cornmeal
  • 2 pinches salt
  • 1 teaspoon sugar
  • Boiling water
  • Cold milk
  • Butter for griddle and topping

Method

  1. 1 Sift together cornmeal, salt, and sugar in a bowl.
  2. 2 Dampen the mixture with boiling water, then thin with cold milk to form a thick batter that holds its shape.
  3. 3 Butter a hot griddle and drop spoonfuls of batter onto it.
  4. 4 Place a small dot of butter on each dodger. Cook until crisp and brown on one side, then flip and brown the other.
  5. 5 Keep warm in a low oven for a few minutes before serving.
