Griddle Corn Dodgers
Ingredients
- 2 cups white cornmeal
- 2 pinches salt
- 1 teaspoon sugar
- Boiling water
- Cold milk
- Butter for griddle and topping
Method
- 1 Sift together cornmeal, salt, and sugar in a bowl.
- 2 Dampen the mixture with boiling water, then thin with cold milk to form a thick batter that holds its shape.
- 3 Butter a hot griddle and drop spoonfuls of batter onto it.
- 4 Place a small dot of butter on each dodger. Cook until crisp and brown on one side, then flip and brown the other.
- 5 Keep warm in a low oven for a few minutes before serving.
