Griddle-Browned White Cornmeal Cakes
Ingredients
- 1 quart coarse water-ground white meal
- 1 teaspoon salt
- Boiling water (as needed)
- Milk (as needed)
- Butter (for serving)
Method
- 1 Combine the meal and salt in a bowl.
- 2 Pour boiling water over the mixture to form a soft dough, adding a little milk to help browning.
- 3 Let the dough stand for at least one hour, then work it together by hand.
- 4 Form the dough into cakes about one inch thick.
- 5 Bake on a greased griddle until browned on both sides.
- 6 Serve very hot, split and spread with butter.
