Griddle-Browned White Cornmeal Cakes

Ingredients

  • 1 quart coarse water-ground white meal
  • 1 teaspoon salt
  • Boiling water (as needed)
  • Milk (as needed)
  • Butter (for serving)

Method

  1. 1 Combine the meal and salt in a bowl.
  2. 2 Pour boiling water over the mixture to form a soft dough, adding a little milk to help browning.
  3. 3 Let the dough stand for at least one hour, then work it together by hand.
  4. 4 Form the dough into cakes about one inch thick.
  5. 5 Bake on a greased griddle until browned on both sides.
  6. 6 Serve very hot, split and spread with butter.
