Greengage And Almond Soufflé

Ingredients

  • 20 greengages
  • 4 eggs
  • 3 tablespoons ground rice
  • 1/2 oz butter
  • 1/2 pint milk
  • 3/4 cup water
  • sugar to taste

Method

  1. 1 Skin and stone the greengages. Blanch and grind the kernels.
  2. 2 Cook the fruit, kernels, water, and sugar until reduced to a pulp.
  3. 3 Smooth ground rice with milk, then mix into the fruit pulp. Add butter and boil.
  4. 4 Remove from heat. Stir in egg yolks, then fold in whites beaten to stiff peaks.
  5. 5 Pour into a greased dish and bake at 400°F for 30 minutes. Serve immediately.
