Greengage And Almond Soufflé
Ingredients
- 20 greengages
- 4 eggs
- 3 tablespoons ground rice
- 1/2 oz butter
- 1/2 pint milk
- 3/4 cup water
- sugar to taste
Method
- 1 Skin and stone the greengages. Blanch and grind the kernels.
- 2 Cook the fruit, kernels, water, and sugar until reduced to a pulp.
- 3 Smooth ground rice with milk, then mix into the fruit pulp. Add butter and boil.
- 4 Remove from heat. Stir in egg yolks, then fold in whites beaten to stiff peaks.
- 5 Pour into a greased dish and bake at 400°F for 30 minutes. Serve immediately.
