Green Tomato Chutney

Ingredients

  • 1 peck green tomatoes
  • salt
  • 1 tsp ground ginger
  • 1 tsp allspice
  • 1 tsp cloves
  • 1 tsp mace
  • 1 tsp cinnamon
  • 1 tsp grated horseradish
  • 12 small or 3 large red peppers
  • 3 onions
  • 1 cup brown sugar
  • vinegar

Method

  1. 1 Slice green tomatoes and layer them in a jar with salt. Let stand for 24 hours, then drain off the liquid.
  2. 2 Place drained tomatoes in a kettle with ginger, allspice, cloves, mace, cinnamon, horseradish, peppers, onions, and brown sugar.
  3. 3 Cover with vinegar and boil slowly for 3 hours.
