Green Tomato Chutney
Ingredients
- 1 peck green tomatoes
- salt
- 1 tsp ground ginger
- 1 tsp allspice
- 1 tsp cloves
- 1 tsp mace
- 1 tsp cinnamon
- 1 tsp grated horseradish
- 12 small or 3 large red peppers
- 3 onions
- 1 cup brown sugar
- vinegar
Method
- 1 Slice green tomatoes and layer them in a jar with salt. Let stand for 24 hours, then drain off the liquid.
- 2 Place drained tomatoes in a kettle with ginger, allspice, cloves, mace, cinnamon, horseradish, peppers, onions, and brown sugar.
- 3 Cover with vinegar and boil slowly for 3 hours.
