Green Salsa Beef and Bean Chili
Ingredients
- 1 pound ground beef (90% lean)
- 1 large bell pepper, chopped
- 6 large onions, chopped
- 1 tablespoon garlic cloves, chopped
- 2 teaspoons chili powder
- 1 teaspoon ground cumin
- 1 can (14.5 ounces) diced tomatoes, low-sodium
- 1 jar (16 ounces) green salsa (or enchilada sauce)
- 1 can (15 ounces) pinto or kidney beans, rinsed and drained
Method
- 1 Place meat, bell pepper, tomatoes, and onion in a large saucepan. Heat on medium for 8-10 minutes, stirring frequently until meat is browned; drain fat.
- 2 Add garlic, chili powder, and cumin; cook until fragrant, about 15 seconds.
- 3 Stir in salsa and bring to a boil.
- 4 Reduce heat, cover, and simmer for 10-15 minutes, stirring occasionally.
- 5 Add beans and cook until heated through.
