Green Pea And Lettuce Pie

Ingredients

  • 1 peck green peas
  • 1 head cabbage lettuce
  • 1 onion
  • 1 egg
  • 1 tablespoon chopped mint
  • 0.5 teaspoon salt
  • Puff or short pastry

Method

  1. 1 Shell the peas and boil them in a little water with the sliced onion and salt until tender.
  2. 2 Wash and shred the lettuce, then place it in a pie dish.
  3. 3 Add the cooked peas and their cooking liquid to the lettuce. If there is too much liquid, add it after baking.
  4. 4 Sprinkle chopped mint over the top and cover with pastry.
  5. 5 Brush the crust with beaten egg and bake in a hot oven (425°F) for about 45 minutes.
