Green Pea And Lettuce Pie
Ingredients
- 1 peck green peas
- 1 head cabbage lettuce
- 1 onion
- 1 egg
- 1 tablespoon chopped mint
- 0.5 teaspoon salt
- Puff or short pastry
Method
- 1 Shell the peas and boil them in a little water with the sliced onion and salt until tender.
- 2 Wash and shred the lettuce, then place it in a pie dish.
- 3 Add the cooked peas and their cooking liquid to the lettuce. If there is too much liquid, add it after baking.
- 4 Sprinkle chopped mint over the top and cover with pastry.
- 5 Brush the crust with beaten egg and bake in a hot oven (425°F) for about 45 minutes.
