Green Corn Muffins
Ingredients
- 2 cups green corn, chopped
- ¼ cup milk (or ½ cup if corn is dry)
- 2 eggs
- 2 cups flour
- 3 teaspoons baking powder
- 1 teaspoon salt
- 1/8 teaspoon pepper
Method
- 1 Chop green corn and mix with milk and well-beaten eggs.
- 2 Sift together flour, baking powder, salt, and pepper. Stir into the corn mixture until well combined.
- 3 Drop batter into hot, greased gem pans.
- 4 Bake in a hot oven (425°F) for 20 to 25 minutes.
