Green Corn Muffins

Ingredients

  • 2 cups green corn, chopped
  • ¼ cup milk (or ½ cup if corn is dry)
  • 2 eggs
  • 2 cups flour
  • 3 teaspoons baking powder
  • 1 teaspoon salt
  • 1/8 teaspoon pepper

Method

  1. 1 Chop green corn and mix with milk and well-beaten eggs.
  2. 2 Sift together flour, baking powder, salt, and pepper. Stir into the corn mixture until well combined.
  3. 3 Drop batter into hot, greased gem pans.
  4. 4 Bake in a hot oven (425°F) for 20 to 25 minutes.
