Green Corn Griddle Cakes
Ingredients
- 1 cup milk
- 1 cup grated green corn
- 1 pinch salt
- ½ tsp baking powder
- 1 egg, beaten separately
- enough sifted flour to make a thin batter
Method
- 1 Combine milk, grated green corn, salt, and baking powder in a bowl.
- 2 Add enough sifted flour to create a thin batter, then stir in the beaten egg.
- 3 Butter a hot griddle and pour in batter to form cakes.
- 4 Cook until bubbles form, flip, and cook until golden. Serve immediately with butter.
