Green Cabbage Slaw With Peanuts And Raisins
Ingredients
- 2 heads green cabbage
- 1/4 cup carrots, grated
- 1/4 cup raisins
- 1/2 cup peanuts
- 1/16 cup low-fat vanilla yogurt
- 1 tablespoon orange juice
Method
- 1 Slice green cabbage into thin strips and place in a large mixing bowl.
- 2 Peel and grate carrots, then add to the bowl with the cabbage.
- 3 Add raisins and peanuts to the bowl.
- 4 In a small bowl, whisk together the vanilla yogurt and orange juice.
- 5 Pour the yogurt mixture over the vegetables and toss to combine thoroughly.
