Green Bean Tomato Rice Pilaf

Ingredients

  • 1/2 cup onion, chopped
  • 2 teaspoons vegetable oil
  • 1/2 cup uncooked rice
  • 1 can (15 ounces) low-sodium green beans, drained
  • 1 can (15 ounces) low-sodium diced tomatoes
  • 1 cup water

Method

  1. 1 Cook onions in vegetable oil in a medium pan until light brown.
  2. 2 Add rice, green beans, tomatoes, and water. Bring to a boil.
  3. 3 Cover and cook over low heat for 10 minutes.
