Green Bean Tomato Rice Pilaf
Ingredients
- 1/2 cup onion, chopped
- 2 teaspoons vegetable oil
- 1/2 cup uncooked rice
- 1 can (15 ounces) low-sodium green beans, drained
- 1 can (15 ounces) low-sodium diced tomatoes
- 1 cup water
Method
- 1 Cook onions in vegetable oil in a medium pan until light brown.
- 2 Add rice, green beans, tomatoes, and water. Bring to a boil.
- 3 Cover and cook over low heat for 10 minutes.
